Vegan Fried Tofu Cubes & Vegetable Fried Quinoa

This recipe was created on one of those nights when I had no idea what I wanted to make for dinner because I need to go grocery shopping. Yet, I do always have items stocked for emergency last minute dinners on nights like this. Some of my go to items that I always stock up on are tofu, tempeh, a variety of vegetables {fresh or frozen}, quinoa and brown rice but I was out of brown rice!

I decided I was going to use quinoa in place of rice to make a vegetable fried rice and I thought fried tofu cubes would go perfectly alongside. My Hubbz, my 15 year old and my 2 year old loved this dinner. It really was pretty simple. Just quite a few steps but if you utilize your time you can prepare this dinner in a little over 30 minutes!


Cooking the Quinoa:

To start, you need to make the quinoa first.

Using a 1:2 ratio, rinse 1½ cups of quinoa in water. Then add the rinsed quinoa to a large pot with 3 cups of vegetable stock or water {if using water be sure to add a generous amount of sea salt}.

Bring the water to a boil and reduce the heat to medium-low. Let it simmer 20 minutes. Then remove it from the heat. Keep it covered {do not remove the lid, you need to let it steam}. Let it sit for 5 minutes. Then, set it aside until ready to use.

 

Cooking the faux “Eggs”:

While your quinoa cooks, you need to make your faux “eggs”. Slice your tofu into bite size pieces. Spray your skillet with coconut oil.

Add the tofu crumbles to the skillet. Then add the turmeric, paprika, salt and pepper.

Using a wooden spoon, mix the seasoning with the tofu while still breaking the tofu up into smaller pieces. Cook about 5 minutes until the “eggs” are universal in color and a little golden brown. Transfer the “eggs” to another dish and set aside until ready to use.

 

Preparing the Vegetable Fried Quinoa:

In a hot skillet, add 1 tablespoon olive oil and toss in the finely chopped onion. Cook about 5 minutes or until translucent and golden brown in color.

Then, add in the remaining vegetables {carrots and frozen peas} and minced garlic. Season lightly with himalayan salt and black pepper. Cook until the carrots are tender about 8 minutes.

Now, add in the remaining vegan butter. Let it melt.

Then, add in the cooked quinoa, green onions and liquid aminos. Mix everything. Raise the heat to high and fry the quinoa, be sure to stir constantly. Fry the quinoa about 3-5 minutes, you don’t want to burn it.

Now toss in the faux “eggs” with sesame oil and combine it all together. Remove from heat.

Keep it covered so the heat stays in. Set the vegetable fried quinoa to the side until ready to use.

 

Preparing the Fried Tofu Cubes:

To begin, start by draining the tofu. Squeeze the tofu and rid it of as much water as you can with your hands with little pressure. Next, wrap the tofu paper towels and then in a dish towel. Press a firmly to remove as much water as possible before using the tofu in this recipe.

Then chop the tofu block in half vertically. After that chop the tofu in 3 strips vertically. Now, horizontally chop the tofu so you get cube sized tofu.

In a medium sized dish add in the cornstarch, breadcrumbs and red pepper flakes. Then mix to combine.

Add the tofu cubes to the flour mixture and toss to coat all sides. Before adding the floured tofu to the hot oil, shake of excess flour.

Add the floured tofu cubes to the hot oil and let it fry about 8 minutes total. You want all sides to be golden brown. Flip the cubes after about 4 minutes, then keep tossing them around in the oil to fry all sides nice and crispy.

Remove the fried tofu cubes from the hot oil and place on a paper towel. You want it to absorb any excess oil and let the cubes cool.

Now, divide the vegetable fried quinoa and fried tofu cubes  between 3 serving dishes. Serve and enjoy!
