    I’m a mama to three boys {a 17 year old, 6 year old and 5 year old}. It has been over five years since this mama went vegan. I love the challenge to veganize all dishes while keeping myself and my family as plant based as I can. Me and my youngest are the only vegans in my household. I don't pressure nor judge others for their food choices. I also don't believe in pushing my beliefs onto another person. If you are curious and want to learn more about the vegan and plant based lifestyle, I'm more than willing and happy to school you on it. Hopefully, I can help you to create some delicious and simple vegan dishes for you & your family to enjoy as well. Thanks for stopping by!

    First, I’m tireedddddddddd 😅. I’ve taken bo First, I’m tireedddddddddd 😅. I’ve taken both my little ones to the park EVERY.DAY.THIS.WEEK. Which for me..is a lot. I promised myself I would get outside more with the boys this summer and take them to do more things since hubbz isn’t able to move around much. #cancersucks I found a local park that’s big enough for them to run around - where I can see them and I don’t have to physically chase them. I can sit and just watch them on the bench or play football 🏈 {catch and tag 😂} with them. With all the evil in the world and the child trafficking and kidnapping I’m not playing with their lives. Idgaf. I won’t take my eyes off them nor give anyone the opportunity. I’ll be damned 😡. It helps me be more in the moment as well being with them and getting fresh OXYGEN #fuckyourmask. Today feels like day 100 detoxing them from their tablets and video games but I think it’s Day 5 or 6 🥴 I lost count. They have done well but that’s another reason why I’ve been going to the park so much is to keep them from making me nuts asking for their tablets and running out most of their energy.

Came home and didn’t feel like cooking but I was hungry so I just chopped and dumped everything into my pressure cooker. I didn’t know what I wanted to make but I wanted curry. So I just went with it.

Summer Curry Soup/Stew
▪️1-2tbsp Avocado Oil
▪️ 3/4 White Onion, diced
- Add oil and diced onion to pressure cooker and sauté about 4 minutes until golden. 
▪️1/2 Head Cauliflower Florets, chopped
▪️1 C Broccoli Florets, chopped
▪️2 Carrots, peeled and chopped
▪️3-4 Small Potatoes, sliced thin
▪️5 Garlic Cloves, sliced
- Add all chopped Veggies to the cooker and sauté about 6-8 minutes until semi browned. 
▪️1 can Coconut Milk {Full Fat}
▪️3 Cups Veggie Stock {Low Sodium}
▪️3 tsp Curry Powder
▪️3/4 tsp Ground Coriander
▪️1/2 tsp Ground Ginger
▪️2 tsp Sea Salt
▪️1/2 tsp Black Pepper
▪️1 can Chickpeas, drained and rinsed
 - Add all liquids, seasoning and chickpeas and stir until combined. Cover and use the stew/soup setting. Then I set a different timer to 20 minutes and wait for that one because the pressure cooker will overcook it with the time settings 😬. Just the way I’ve done it.

    Went to @traderjoes and found the non dairy 💎. Went to @traderjoes and found the non dairy 💎. Non-Dairy/Vegan Cheesecake. It came 2 in a pack but of course hubbz got to one of them before I did. I DIDN’T plan on sharing 🙄. I hid them way in the back of the refrigerator too 😤. I still rather have homemade vegan cheesecake than store bought but this feeds the need. I’d buy them again. Served them with fresh organic fruit 🥝🍓

I don’t add any additional sugars or thickeners. This gives it more of a runny liquid or juice consistency because those additives are not included. A couple of ways to make it thicker naturally is by adding more sweetener of choice than elderberries. I believe the elderberries and other healing herbs should be the majority in my syrup. Another, is by adding cornstarch or arrowroot powder and I personally believe in using the least amount of ingredients possible.

1Tbsp Avocado Oil
1 White Onion, diced
5 Cloves Garlic Minced
6Tbsp Vegan Butter
1C Garbanzo Bean Flour
8C Veggie Stock, distilled Water
4 stalks Celery, thinly sliced 
4 Carrots, diced
5-6 Golden Potatoes, halves then thinly sliced
1-2C Broccoli Florets 
4 Ears of Corn or 3C Frozen Corn
2 tsp Sea Salt
2 tsp Garlic Powder
1.5 Tsp Onion Powder
1.5 tsp Paprika
1.5 tsp Black Pepper 
2C Almond Milk, unsweetened 
1Tbsp Arrowroot or Cornstarch Flour
Garnish with Green Onions, Sriracha or favorite Hot Sauce

In my large pressure cooker on sauté I added the avocado oil. Tossed in diced white onion and cooked about 3 minutes until translucent and starting to brown. Add in the garlic cook another 2 minutes on sauté. Add in the vegan butter with flour. Combine and mix cook about 2-3 minutes until fully incorporated and no clumps are showing. Add in the veggie stock or distilled water, sliced celery, diced carrots thinly sliced potatoes, choice of sweet corn kernels and broccoli. Also add in the seasonings. Continue to season by adding to taste. This is just a base. I don’t like to overly season bc some like more or less. For serving, I season individually for acquired taste. Stir around to combine until the roux flour mixture is fully incorporated into the liquid. Then cover and change to “soup/stew” setting and set the timer for 15 minutes. It cooks pretty fast. That’s why I live making soup in my pressure cooker when it comes to softening hard veggies. I don’t follow the “soup/stew” timer setting I set a separate timer to check on it. Once the 15 minutes is up. Remove the cover, stir and check potatoes. If they are fork tender, turn off the cooking setting and set to keep warm. Add in 2C unsweetened Almond milk and mix to combine. Remove 1C liquid only from the soup into a measuring cup. Add in 1Tbsp Arrowroot or Cornstarch and stir until all clumps are settled. Add the arrowroot/cornflour mix back into the soup and stir to fully combine. Let it cook about 10minutes to thicken. Serve individual portions and add choice of garnish. Enjoy!
