Coquito which means “little coconut” in Spanish is a traditional drink that originated in Puerto Rico and is usually made for the Thanksgiving and Christmas Holidays. The coconut-based alcoholic drink is much similar to that of Eggnog. Many people call it the “Puerto Rican Eggnog”. I personally can’t compare the two. Coquito is in a lane of it’s own and is much more satisfying, in my opinion.

There is a big difference between traditional Eggnog and that of Coquito. Traditional Eggnog is made with milk, eggs, sugar and nutmeg that is usually cooked until thick and creamy. It’s almost like you’re drinking a custard beverage. Sometimes, it is turned into an alcoholic beverage using brandy, rum or whisky. Although, there has been quite the debate over the years about whether or not Coquito should be made with egg yolks or not, like any other recipe its much more of a personal preference. I personally have never liked drinking egg yolks. Even before I transitioned to a plant-based lifestyle. I’m definitely team NO YOLKS.

The best Coquito is extra thick and creamy with a rich coconut flavor due to the coconut milk, cream of coconut, sweetened condensed milk and spices of cinnamon and nutmeg. Its best served cold and enjoyed with friends and family.

INGREDIENTS: Organic Coconut Milk, Cream of Coconut, Sweetened Condensed Plant-Based Milk, Superior White Bacardi Rum, Distilled Water, Vanilla Extract, Spices of Cinnamon and Nutmeg.

SIZE: 750ml Bottle. This order is for one bottle of Vegan Coquito.

TO ORDER: This is only for LOCAL PICKUP in the NORTH JERSEY area. Coquito bottles are made to order. I usually don’t have extra bottles for purchase unless I recently made a batch. I prepare these as ordered so they will be fresh when picked up.

STORAGE: Vegan Coquito bottles MUST be refrigerated, opened or unopened. Once opened, the Coquito will last several months in the refrigerator. The Coquito likes to separate from the coconut ingredients, so before serving, be sure to shake well each time.

    Amazing love that it’s not to thick or too sweet!

    I personally like it better than the traditional coquito.

    I’m a mama to three boys {19, 8 and 6 years old}. It has been over sixyears since this mama went vegan.     To be honest, I had to look up what the name was o To be honest, I had to look up what the name was of the “Big Mac”. 😂 I haven’t ate there since I was about 10 myself. 

I won’t take my boys to eat at a fast food stop. I don’t even consider those places of business a restaurant. The most they would get are fries from Chick Fil A. So years ago my son would feel bad when he would see other kids with “happy meals”. I used to tell them the only thing that makes kids happy about getting those are the toys. So I made a deal with him I would buy the toy certain times of the year depending on what the toy was for him to have it but not the food. We would always eat elsewhere. 

As he got older I showed him the video of photo (I can’t remember) of the food that someone did an experiment on where the food was hard and crusted but didn’t mold or expire. He thought it was the most disgusting thing. I didn’t even have to explain too much in details. 

Now that he’s 8 he will tell kids and their parents “That McDonald’s food is trash 🗑, It’s bad for you and it just gets hard which means it would be hard in your belly.” 

At least I know he’ll never eat there 🤣

For the Omelette:
▪️3/4 C Garbanzo Bean Flour
▪️1.5 Tbsp Flax Meal
▪️1 Tbsp Nutritional Yeast
▪️1/2 tsp Garlic Powder
▪️1/2 tsp Onion Powder
▪️1/2 tsp Kala Namak
▪️1/2 tsp Turmeric
▪️1 and 1/4 C Distilled/Spring Water

For the Veggies: {customize for your preference}
▪️1/2 Red Onion, thinly sliced
▪️2 Garlic Cloves, sliced lengthwise
▪️1 Organic Bell Pepper, thinly sliced

Why? Why not just take a deep breath, allow what will happen to just happen. 

Be present in your life at this moment. 

Every moment brings something special into our lives. Allow the moment to be and enjoy what is to come. 

It is a blessing you are able to wake up to each new day. Be grateful!

    Seriously 😒. This is why you need to ask the Seriously 😒. 

This is why you need to ask the name of the restaurant, so you can call ahead and see what’s on the menu. Once they tell you they have salads and some fruit you can pass on that invite and decide another time where you choose a place for you both to agree on! Ahead of time! 

Always bring a snack from home so you can at least prepare yourself in this situations 🤭

    Simplified breakfast. “Egg” Scramble using Jus Simplified breakfast. “Egg” Scramble using Just Egg. So many non-vegans that have tried this day how similar it is to the real thing, without eating a chicken period 😅. 

1. Add some broth or avocado oil to a skillet. 
2. Add in the chopped tomatoes and mushrooms. Cool 1-2 minutes.
3. Add in the just egg let it sit a few minutes on medium low. Using a spatula scrape the skillet and break up the “egg”. 4. Add in Black Salt, Garlic Powder, and some chopped fresh Spinach. 
5. Remove from heat, top with hot sauce if desired, and serve. 

Breakfast can be quick and simple. You can still eat all of the same classic meals you love. You just need to learn the best alternative options. 

You can also use Chickpea/Garbanzo Bean flour to make an alternative egg dish.

    taking some rest and relaxation days to chill out, taking some rest and relaxation days to chill out, most people dread the weekend coming to an end. 

The thought of Monday coming into play is hard to accept for some. Mondays seem to add a lot of pressure to some. 

However, Monday shouldn’t have such a bad reputation. Monday’s are the start of a new week. 

Monday motivation is extremely important and can set the tone for the rest of your week ahead. 

- You can use Monday to have a more positive outlook to the rest of the week. 

- You can set goals to conquer in the next few days

- It can give you the push you need to finish something you held off on last week. 

- You can start the new week with a new mindset!
