Are you ever tired of eating the same breakfast every morning? Like cereal or making pancakes or waffles? Tired of Tofu Scramble and maybe just want something quick and healthy that you can grab those busy mornings? I’ve had many mornings that I’m tired of eating the same basic breakfast. I’m far from basic, so my breakfast should be too!
This recipe also gives you a healthy snack option for both children and adults. Keep these Raw Vegan bars handy for when hunger strikes – they are so yummy, are packed with so much goodness and naturally sweet. No added sugars and it’s gluten free! Definitely a better choice than buying those prepackaged bars in the stores that are loaded with sugar and nasty fillers. You can make this recipe so versatile. Maybe swap out Apricots for Dried Cranberries or Blueberries. Get creative!
Measure out all the ingredients. Dried Apricots, pitted Dates, Raw Almonds and shredded Coconut.
Add all ingredients into a food processor.
Pulse until the ingredients combine together. You may have to stop and scrape the sides to be sure everything gets well combined.
The result should be somewhat of a sticky ball.
Line a baking sheet with parchment paper and place a piece of wax paper overtop the sticky mixture. Using a rolling pin shape it into a rectangle.
Place the baking sheet into the freezer for 45 minutes until chilled and set. Remove and cut into bars. Store in a covered container in the refrigerator.

- 2 cups Dried Apricots
- 1 cup Medjool Dates pitted
- 1 cup Raw Almonds
- 1/2 cup Coconut Flakes

- Add all ingredients to a food processor and process until all is well and combined. It should combine into a sticky ball for the most part.
- Stop the processor and scrape sides and process again as needed.
