Every holiday dinner you think about your main entree and side dishes. You set out a menu and decide what dishes you want to make. Sometimes the best meals are the simple and quick ones to prepare. I personally think every dinner should have a salad as well.
My all time favorite salads are Caesar salads. Caesar Dressing is classically made with minced anchovies…ewww disgusting! When I found that out I was so grossed out I just couldn’t eat it any longer. I am so happy since transitioning to a vegan lifestyle because I have learned what foods can be substituted so I can still eat all of those meals I always enjoyed eating before being a vegan.
I knew there were multiple ways to make vegan Caesar Dressing. I also knew there must be a way to make it using classic Hummus as the base. So I happened to google it and came across a quick five minute recipe. The author of the recipe actually runs one of my favorite blogs for plant based recipes. The minimalist baker! Her recipes are usually 10 ingredients or less and pretty quick and simple instructions. This recipe is adapted from {MinimalistBaker.com}.

Large Salad
|
- ½ cup Hummus
- 2 teaspoon Whole Grain Mustard
- 1 teaspoon Lemon Zest
- 5 tablespoons Lemon freshly juiced
- 4 tablespoons Extra Virgin Olive Oil
- 6 tablespoons Garlic minced
- 4 teaspoons Maple Syrup
- 3 teaspoon Capers Brining Juice
- 2 teaspoon Capers finely minced/smashed
- Sea Salt to taste
- Ground Black Pepper to taste
Ingredients

- Add hummus, whole grain mustard, lemon zest + juice, minced capers + brining juice, minced garlic and maple syrup to a food processor.
- Pulse to combine all ingredients.
- Pour the olive oil into the processor while pulsing.
- Taste and adjust flavor as needed, adding more salt and pepper, lemon juice, or minced garlic if desired!
- Use immediately, or store in the refrigerator up to 5-7 days
