Vegan Chickpea Nuggets

I have been experimenting with different flavors and textures for a new “nugget” replacement recipe. Actually since going vegan that has been my main goal. Even though this one is great, I’m still not done looking for a recipe for my boys. This one turned out to be one of the recipes that is my go-to whenever I’m in the mood for some nuggets.

Although I’ve made a couple great substitutes I still have yet to find one that my 3 year old will eat with no problem. I’m determined to create one he will love. My three year old is such a challenge when it comes to the food he will eat. I can barely even get him to taste new foods. He’s that picky. It is hard on me as a mom. Sometimes I feel like I’m failing him because he’s not eating as healthy as I would like. He’s completely opposite from my two year old son. My two year old will eat every fruit and vegetable, every grain and anything I cook for myself he will eat as well. So my main goal is to figure out new replacement recipes that I can sneak veggies into the base without him knowing and him still enjoying it. It’s the only way I will be able to feel better. Knowing he’s still getting some veggies because as of now it’s almost non-existent in his diet.


Start by adding the first 7 ingredients into a processor. Pulse all the ingredients until it’s completely combined and broken down. Add Salt & Pepper to taste & mix again.


Scoop out a small amount of the chickpea mixture and shape your nuggets.

Dredge the nuggets in panko & set aside. Continue until all nuggets are covered in panko.

Using a skillet on medium heat, add oil. Then add in a few nuggets at a time and cook 3 minutes per side {until just golden & crispy}. Serve with sauce if desired & enjoy
