Sometimes it’s hard to get dinner on the table at the exact time every night. My go to meals are usually pasta based or a chili. I love both of those dishes. So much that I’ve probably made 50 versions of each. So why not combine pasta and chili to make the most serious type of comfort food packed into one skillet?
Try it, I’m sure you will love it as much as my family did. Great thing about it, is it is kid approved! Yes! Another win!
Start by cooking the pasta according to the package instructions, leaving it al dente. Drain and rinse the pasta then set it aside.
In another skillet, heated on medium heat add in the minced shallot. Sauté for 5 minutes. Then to the same skillet add in the pasta, beans, corn & tomato sauce, nutritional yeast & spice mix. Cook about 8 minutes, stirring often. If needed add in a little bit of water then mix.
Finally, add in the fresh spinach & fold it into the pasta until it becomes wilted. Add salt and pepper to taste. Serve and enjoy!

- 8 ounces Pasta of Choice
- 1 tablespoon Grape Seed Oil
- 1 Shallot minced
- 1 can Red Kidney Beans drained and rinsed
- 1 ½ cups Corn
- 16 ounces Tomato Sauce
- 3 tablespoons Nutritional Yeast
- 1 teaspoon Ground Cumin
- 1 teaspoon Smoked Paprika
- 1 teaspoon Chili Powder
- ½ teaspoon Garlic Powder
- ¼ cup Spring Water {if needed}
- 2 handfuls Fresh Spinach
- Sea Salt to taste
- Ground Black Pepper to taste
