When I woke up this morning my boys wanted hash browns as part of their breakfast. Of course once I started making their hash browns I wanted some for myself. Hash browns have always been a favorite of mine since I was a young child. I seemed to think I passed the love for potatoes down to my boys {yes all 3 of them}. I know they’re processed & not home made but sometimes I do need that option on those busy weeknights for a simple heat up and go nights. Moderation is key!
When it’s time to restock our home with food and the everyday cooking staples, Hubbz and I usually have a different choice for grocery shopping. Hubbz likes to go get certain foods from Aldi while I mostly shop at Trader Joe’s. I just happen to have a little obsession with most of what is offered at the Trader Joe’s by our place. Anyways, he loves buying me new items to try that are “vegan”. He brought me home a few new boxes of vegan burgers & these happen to be quite delicious! I decided to share a quick breakfast option that I used this veggie burger for.
When assembling this sandwich there’s only a few quick steps before you’re enjoying your nutritious breakfast sandwich.
To speed up the process, I always nuke my hashbrowns in the microwave for 1 minute. In my opinion it helps it crisp up faster. Add the warmed hash brown to a hot skillet. Pan fry the hash browns and veggie burger about 6 minutes or less each side.
Once the hashbrowns are crispy lay on a plate. Assemble in the order of your choice with veggie burger, vegan cheese, lettuce, tomatoes, avocado slices, ketchup and sriracha.
This is a simple sandwich that takes less than 15 minutes to make from start to finish. The best part about breakfast sandwiches is that you can make it all your own and freeze them for busy mornings. Just need to reheat it. Top it with so many different options! That’s a win-win
