I’ve been wanting to make chocolate pancakes for some time now, but I’m not sure if my picky eating three year old would actually eat them if his pancakes didn’t look like they normally do {insert eye roll}. I decided to add a slight chocolate taste to see if he notices so the next time I can go overboard. I even asked him if he liked his chocolate pancakes and he said, “Mommy they’re delicious!”
Just a note if you’re looking for an extreme chocolate taste than this isn’t your recipe. It was more or less a trial recipe to see how it went with my son. I thought I would share just in case you wanted something different than the regular pancake recipe
You can use my Vegan Egg Substitutes of Chia Gel or Flax Eggs for the perfect non-dairy egg replacement.
Mix all ingredients together {except the peanut butter}, in 1 bowl. Be sure to mix until the batter is no longer clumpy.
Pour your batter into preferred size of pancakes into a hot skillet or griddle. Watch for air bubbles, then flip pancake. Repeat until all Batter is used up.
Top with optional toppings like peanut butter melted & drizzled, fruit preserves, maple or date syrup, confectioners sugar, walnuts or whatever else delicious !

Large Pancakes
|
- 1¾ cup Trader Joes Multigrain Pancake Mix
- 1 cup Plant-Based Milk
- ¼ cup Cocoa Powder
- 4 tablespoons Applesauce Unsweetened
- 3 tablespoons Chia Gel
- 2 tablespoons Ground Flaxseed
- 1 teaspoon Vanilla Extract

- Top with melted peanut butter with fresh fruits and maple or chocolate syrup to top!
