Being that I’m originally a northerner, born in Massachusetts & all my family is from Massachusetts, seafood was a big part of our lives. Yes I’m a Patriots, Celtics and Red Sox fan. I’ll save that for another post though, I’m a big sports girl!
Back to this post. A lobster roll is a fast-food sandwich native to New England made of lobster meat served on a grilled hot dog-style bun with the opening on the top rather than the side.
There used to be something magical about the sweet and succulent lobster meat mixed with mayonnaise {which was one of the only ways I would consume mayo, I was never a big fan} on a buttery roll. Now that I’m vegan, I could never go back to actually eating a lobster. I can’t do anything about all the Lobster I ate growing up but I won’t contribute to animal pain anymore. So I had to find a substitute for all my favorite childhood recipes.
I would have never thought to use hearts of palm but once I did open this little jar of greatness, I realized the texture is just so spot on.
In a medium size bowl combine the chopped hearts of palm, vegan mayo, lemon juice, dill & old bay seasoning & mix well. Add salt & pepper to taste, set aside.
Toast your roll & assemble your sandwich.
Top with a squeeze of fresh lemon juice & sprinkle some more old bay seasoning on top.
