Cauliflower “mashed potatoes” can be a guilt-free side dish when you’re looking to keep your meal healthy yet delicious. If you’re looking to lower your carb intake and still want the taste and texture to that of mashed potatoes try substituting with this gem of a vegetable.
This recipe is actually quite simple. Steam the cauliflower, then purée it with garlic, vegan butter, a little olive oil and sea salt. You might have found a new healthy alternative favorite.
Mashed cauliflower has a similar taste to mashed potatoes but with much less carbs. Garnish it with chopped herbs and your family won’t even realize it’s not potatoes! Sneaky way to get those cauliflower vegetables in for little picky eaters.
To begin, start with chopping your cauliflower into florets.
Next, add the chopped cauliflower florets to a large pot of boiling water. Steam the cauliflower for 25 minutes until tender.
Transfer to the food processor and add steamed cauliflower, almond milk, vegan butter, garlic, sea salt and ground black pepper.
Pulse until smooth and creamy.
Once you get the consistency and texture you are looking for, transfer the creamed Cauliflower to your serving dish and garnish with chives. Enjoy!
