Tonight’s dinner was a fast decision. Hubbz has been telling me to make meatball sandwiches for a while now. I am just always missing one of the ingredients to make it.
I knew right away this sandwich couldn’t just be meatballs, tomato sauce and bread I had to go a couple steps further..like always. So I added a few greens and some cashew cheese that I had made previously. It just made the sandwich that much more filling and delicious. Oh and it’s exactly what it stands for creamy, dreamy and cheesy goodness!
First, preheat the oven at 375F. Line a baking sheet with parchment paper. Arrange meatballs on the prepared sheet and set aside until the oven is preheated. Once your oven is preheated Bake the meatballs at 37F for 10 minutes. Toast your bread for the last 5 minutes before your meatballs are done cooking.
Start assembling your sandwiches. Starting with the bottom of bun, top with sauce, then spinach, then meatballs, then more sauce, Vegan Cashew Parmesan, vegan mozzarella, then a few fresh basil leaves.
Finally, pour on some Vegan Cashew Cheese Sauce and top with a toasted bun. Serve and enjoy!

- 18 Meatless Meatballs {Trader Joe’s}
- 1/2 jar Tomato Sauce
- 2 tablespoons Vegan Cashew Parmesan
- 3 ounces Vegan Mozzarella Cheese
- 1 handful Fresh Spinach
- 4 Fresh Basil
- 3 ounces Vegan Cashew Cheese Sauce
- 2 Hoagie Rolls
