Energy balls happen to be my go to snack when I’m craving something sweet. Pumpkin is just my weakness. I can eat pumpkin in the summer although it’s nothing like eating pumpkin during the fall in the crisp fall breeze. Yes I love fall and everything pumpkin. So I had to make these Pumpkin Energy Balls.
I love simple recipes that are just as healthy as they are delicious. Now don’t come for me because I said they were healthy. We’ve all been told that chocolate can be good for us too. Remember everything in moderation and you won’t miss out on the sweet things in life.
Combine all ingredients together in a large mixing bowl. Stir & fold ingredients together until thoroughly combined. Cover & refrigerate 30 minutes to chill the mixture. It helps with rolling the balls together.
Once chilled, roll the mixture into balls of desired size or shape into bars.
Store in an airtight container and refrigerate up to 1 week.
