This Vegan Seitan Gyro is my go-to dinner or even lunch lately. I could have this everyday of the week and still never be tired of it. You could always customize it differently with additional toppings to switch it up. It’s a pretty light meal but it can be filling depending on how well you stuff it. I usually serve my Gyros with fresh cut potato fries or a salad on the side. It’s really up to you on what you want to serve alongside it or you could serve this alone.

Start by spraying your skillet with coconut oil over medium heat. Add in your sliced Seitan strips and cook until just browned about 3-4 minutes on each side. Remove from your skillet and set aside to cool.
Assembling the Seitan Gyros
Now, you need to prepare your Seitan Gyros.
Start with the pita bread. Slap on as much or as little Vegan Tzatziki Sauce you would like.
Then top it with 5 strips of Vegan Seitan.
Next layer on the red onions, romaine lettuce, chopped tomatoes, some more Vegan Tzatziki Sauce and a little crumbled Vegan Oregano “Feta” No Cheese as garnish.
Serve immediately with a side of fries or anything desired.
