Pasta dishes are one of the most affordable meals you can make and to top it off it’s less time consuming. You can make a hearty & nutritiously delicious meal in under 30 minutes. Pasta is one of my go to meals for those busy weeknights. You know those nights that your kids are causing chaos, toys all over the place, running wild & fighting over which toy is theirs. Nights like those I get overwhelmed and I can’t be standing in my kitchen for much more than 15 minutes at a time. I have to throw together a simple meal that I can just put on the stove or in the oven and let it cook. I can’t spend time stirring and flipping food. You get my drift?
That’s when these throw together pasta dishes come in handy. I just grab a few ingredients out of my refrigerator that I think would go well together and let it cook. In the end you have a quick meal that nine out of ten times is life changing! That’s a win for moms all over!
First, cook the pasta according to the package instructions. Drain and rinse the pasta and set aside.
Next, add oil to a hot skillet on medium high heat. Add in the minced garlic, shallots and bell pepper. Sauté for 6 minutes. Add in the Soyrizo and cook an additional 3 minutes.
Transfer drained pasta to the skillet. Toss to combine thoroughly. Add in spinach leaves and toss to wilt. Serve and enjoy

- 16 ounces Elbows Macaroni
- 1 tablespoon Grape Seed Oil
- 2 Cloves Garlic minced
- 2 Shallot diced
- 1 Red Bell Pepper sliced
- 1/2 Soyrizo {casing}
- 2 handfuls Fresh Spinach
