Many moons ago I used to be a ChickFilA Fanatic. I lived there. The spicy chicken sandwich was everything but I could NEVER eat that shit again! I’m not even tempted. I do miss eating spicy chicken-not-chicken texture sandwiches though. If that makes sense to you? It does to me. Ok well, what I mean is a vegan replacement for a chicken sandwich.
Every vegan has something they miss, not saying they miss the taste or texture of it but the familiarity maybe? I miss being able to go to a drive thru on those late nights and get a spicy chicken sandwich and waffle fries. I DO NOT miss eating chicken. Yuck! I get so disgusted thinking about eating birds now. I can’t imagine how I consumed them and for as long as I did. I’m just thankful I know better and I chose to be better. Well that’s enough said for this post. It has taken me hours to write this because my 2 toddlers were pulling for attention when they woke up half way through me being done writing it. My luck..I know! Hope you enjoy it!
To make the ChickNUN Patty:
In your first mixing bowl you’ll want to start with your dry ingredients. Add your vital wheat gluten flour, onion powder, ChickNUN seasonings* and the sea salt. Mix well to combine.
Prepare your ChickNUN Seasonings*
In a small dish add 1 teaspoon Dried Thyme, 1 teaspoon Garlic Powder, ½ teaspoon Paprika, ½ teaspoon Nutmeg, ½ teaspoon Ginger and mix all together until fully combined.
In a smaller bowl, add in the wet ingredients. Add the tahini, choice of hot sauce and vegetable stock.
Next, add the wet ingredients to the dry ingredients and fold to combine.
Then using your hands knead the dough about 2 minutes until it’s uniformed and the flour is blended in.
I made a triple batch so I laid my dough on parchment paper on a baking sheet and repeated the first few steps for 2 more patties.
Next to a deep pot, add your patty and cover it with either vegetable stock or water. Bring to a boil then reduce the heat and let it simmer for an hour.
Remove it from the liquid.
Blot the patty with a paper towel to remove any excess moisture. Set it aside to cool.
Breading your ChickNUN Patty:
Prepare your vegan egg. Using 1 tablespoon ground flaxseed with 2½ tablespoons of spring water. Mix and let it thicken up; about 5 minutes. Then add a little sriracha to it as well. If needed you can always add a little more water to thin out your flax “egg”. It’s easier when it’s less thick.
Now prepare your flour for breading. In a shallow dish add your all-purpose flour, your seasons for breading {garlic and onion powder, paprika, sea salt & cayenne pepper}. Whisk all together so its combined thoroughly throughout.
Next, coat the dough in the all-purpose flour.
Then, dredge in the flax “egg”. Let any excess fall off before placing back into the flour.
Finally, return it back to the flour. Be sure to cover and coat all sides.
Frying your ChickNUN Patty:
Finally, add oil to a deep pot on medium-high heat. Add the coated ChickNUN patty to the oil and let it fry equally on both sides.
Remove from the oil and let it cool on a paper towel or parchment paper to absorb the excess oil.
Prepare your Sriracha Mayo:
Lastly, make your Sriracha Mayo.
Add some vegan mayonnaise to a small dish with some sriracha and mix well.
Serving your ChickNUN Patty:
Assemble your sandwiches or however you will be serving this Sriracha ChickNUN patty. Serve with Sriracha Mayo and Enjoy!
