Those early Sunday mornings that you’re awake before the kids and your husband {or boyfriend}, and you have a few extra minutes to make a special breakfast for your family you should definitely try this! This Strawberry Compote is the perfect add on for those vegan breakfast pancakes. You could even use this for your late night snacks that you want to go above and beyond making just an ordinary snack. Prepare this quick fruit compote to add that extra sweetness to anything you desire.
First, add the coconut sugar, water & corn starch to a small pot on medium heat and mix well.
Next, add in the lemon juice & zest, and whisk again.
Last but not least add in the sliced strawberries. Muddle or mash the strawberries {leaving a few chunks}. Simmer the strawberry mixture 8 minutes while mashing lightly.
Remove the mixture from heat. Use on pancakes or nice cream. If you have any leftover it will save in the refrigerator up to 3 days.
Serve it with my Vegan Pancakes or Vegan Waffles, Oatmeal or Overnight Oats, ice cream, yogurt or anything else you desire. You can also use any fruit you like { blueberries, raspberries, mango, etc}. Take the extra step to make this. You won’t be disappointed.

Thanks for this recipe! I just made one-fourth the portions and improvised with the MICROWAVE and it still worked perfectly! For Step 1 I did 30 seconds on power 7 and for Step 2, 1 min 30 seconds on power 7. The consistency and flavor turned out great!
