Are you in need of a quick but nutritious lunch for your child? This is perfect for those busy afternoons where you only have time to pour and heat up. This takes under 15 minutes to make from start to finish. It’s packed with fiber and protein and great for kids all the way up to adults! It’s hearty and just a little bit sweet at the same time.
This might be the perfect meal to throw into rotation for a kids lunch for school. Heat it up in the morning and store it in a stainless steel thermos and by lunch time it will be the perfect temperature, just warm enough for your little one to enjoy a healthy lunch even on the go!
To start, you want to use organic baked beans. Be sure to check that they are vegan. You don’t want beans that contain any animal meat.
Next, chop your Veggie Dogs into thin slices.
Then you want to add in all remaining ingredients into a small pot over medium heat.
Add in your can of beans, sliced veggie dogs, ketchup, maple syrup, garlic powder, onion powder, sea salt and ground black pepper to taste. Mix to combine all the ingredients. Let it cook about 10 minutes to heat through the mixture.
During the last few minutes you can add in some fresh spinach. Just fold it into the beans to heat it up and wilt the spinach. Once the spinach has wilted remove it from the heat.
Divide into serving bowls and enjoy.
