My love for waffles has gone way back to when my mother used to make me waffles with ice cream for breakfast! Yes I said that right, she was the coolest mom! Waffles are such a simple breakfast to make. That is, if you own a waffle iron. All you do is mix the ingredients then put it on the iron and let them cook themselves. The little green light on my iron tells me when they’re done. Side note is to make sure you cook them on almost the highest setting so you get those crispy, golden waffles.
I use the same recipe as when I make pancakes only difference is the iron. I just like being able to offer a different texture other than fluffy pancakes for breakfast. The fact that these are vegan just makes them that much more wonderful!
First, start by adding your pancake/waffle flour mix, choice of plant-based milk, applesauce, chia gel, ground flaxseed, cinnamon and vanilla extract to your mixing bowl. Combine all the ingredients until most clumps have been mixed in.

Next spray your waffle iron with coconut oil and turn heat high. Pour in a small amount of batter and smooth it over to create size and shape of your waffles. Let it cook a few minutes the light on your waffle iron should change from red to green once it is done. Repeat until all the batter has be used up. Plate your waffles and serve with choice of toppings.

- 3 tablespoons Chia Gel
- 1 teaspoon Ground Cinnamon
